Ingredients:

  • 1 pound boneless, skinless chicken breasts, cooked and shredded
  • 2 tablespoons olive oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 2 cans (15 ounces each) white beans (such as cannellini or great northern), drained and rinsed
  • 1 can (4 ounces) diced green chilies
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon cayenne pepper (adjust to taste)
  • 4 cups chicken broth
  • Salt and black pepper to taste
  • 1 cup frozen corn kernels
  • 1/2 cup heavy cream (optional)
  • 1 cup shredded Monterey Jack or white cheddar cheese
  • Fresh cilantro, chopped, for garnish
  • Lime wedges, for serving

Instructions:

Cook and Shred Chicken:

Season the chicken breasts with salt and pepper.

Cook the chicken in a skillet over medium-high heat until fully cooked.

Shred the chicken using two forks and set aside.

Saute Onion and Garlic:

In a large pot or Dutch oven, heat the olive oil over medium heat.

Add chopped onions and sauté until they become translucent.

Add the frozen corn kernels and continue to simmer for an additional 5-7 minutes.

Finish with Cream (Optional) and Cheese:

If using, stir in the heavy cream to add richness to the chili.

Add the shredded cheese and stir until melted and well incorporated.

Serve:

Garnish with chopped fresh cilantro and serve with lime wedges on the side.
