Shrimp Ceviche - Dinner at the Zoo

Ingredients:

  • 1 pound (450g) raw shrimp, peeled, deveined, and chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, finely diced
  • 1 cucumber, diced
  • 1 avocado, diced
  • 1/2 cup fresh cilantro, chopped
  • 3-4 limes, juiced
  • 1 orange, juiced
  • Salt and pepper, to taste
  • 1 jalapeño, seeded and finely chopped (optional for heat)
  • Tortilla chips, for serving

Instructions:

Prepare the Shrimp:

Rinse the shrimp under cold water and pat them dry with paper towels.

Chop the shrimp into bite-sized pieces.

Marinate the Shrimp:

Place the chopped shrimp in a bowl.

Squeeze the juice of the limes and orange over the shrimp.

Mix well to ensure all shrimp pieces are coated in the citrus juices.

Cover the bowl with plastic wrap and refrigerate for at least 15-20 minutes.

The acidity from the citrus juices will “cook” the shrimp.

Combine Ingredients:

In a large bowl, combine the marinated shrimp with halved cherry tomatoes, diced red onion, diced cucumber, diced avocado, and chopped cilantro.

Add the finely chopped jalapeño if you want to add some heat.

Season to Taste:

Season the ceviche with salt and pepper to taste.

Adjust the seasoning as needed.

Chill and Serve:

Return the ceviche to the refrigerator for an additional 15-30 minutes to let the flavors meld.

Serve the shrimp ceviche chilled in individual bowls or glasses.

Garnish and Serve:

Garnish with additional cilantro leaves or avocado slices if desired.

Serve with tortilla chips on the side for scooping.

Enjoy:

Serve your quick and easy shrimp ceviche immediately and enjoy the refreshing and zesty flavors.

This shrimp ceviche is perfect for a light and flavorful appetizer or a refreshing summer dish.

Adjust the ingredients and seasoning according to your taste preferences.
